Minimalistic is best with mods. I'm fan of anything that adds more flavor while keeping things balanced, and mods that add more challenges. Some of my favorites, in no particular order:
-Frostfall
-Realistic Needs and Diseases
-Revenge of the Enemies
-Immersive Armor + Weapons
 For aesthetics, I love the amedian born book of silence skins.

I have the unofficial patches, town enhancements, (mudcrabs with monocles), and armor and hair stuffs.

and Houses! I loves all the space to hoard things.

Noooo! Don't enable her and her habit lol. Her skyrims can't handle them!

Arissa the wandering rogue is my fav. It has no skimpy content and it's made by professionals.

Amazing Follower tweaks is the BEST

Oh! You can also add legendary towns, Landlord, outfit for npc and immersive mods. My advice? Check Brodual for the BEST mods. Fav youtube Skyrim channel. ;D
